Vegan Delicious Creamy Carob Mousse

 

Ingredients:

2 Avocados

3 Tbsp Carob Powder

1/2 Cup 100% Pure Maple Syrup

1/2 Almond or Cashew Milk

Pinch of Sea Salt

Raw Cane Sugar to Taste

 

Instructions: 

Combine all ingredients into a blender, then blend till smooth like a pudding. 

Serve, optional toppings berries on top, or nuts on top, or with bananas.  Twice or 3 times the ingredients can be used for more deliciousness.  

 

 

 

 


 


 


Vegan Chocolate Cake

 

Ingredients:

1/2 Cup Cacao Powder

1/2 Cup Brown Sugar Packed

1 (15 oz) Can Pumpkin Puree

1 Cup Pure Maple Syrup 

2 Teaspoons Vanilla Extract

1/2 Teaspoon Salt

8 oz Unsweetened Chocolate 100% Cacao

1 Cup Coconut Oil

Optional Toppings:

Powdered Sugar

Raspberries

Coconut Cream or Vegan Ice Cream

 

Instructions:

Preheat oven to 375 degrees F and prep your 8 in spring form pan with parchment paper (cut out a circle of parchment paper and lay it on the bottom of the pan) and grease the pan, including the sides with cooking spray.  Place the spring form pan onto a baking sheet lined with a silicone mat.  Place cacao powder, brown sugar, pumpkin, maple syrup, vanilla, and salt in a large bowl.  Set aside.  Melt the baking chocolate and coconut oil together in a saucepan over low heat, stirring until completely melted.  Combine the melted chocolate/oil with the cacao/sugar/pumpkin, etc. mixture.  Whisk well until fully combine.  Pour the batter into the prepared pan.  Smooth the top with a spatula.  Bake in preheated oven for about 60 minutes.  Allow to cool in the pan for 15 minutes, then remove the sides of the springform, and allow to cool completely before wrapping in Saran Wrap and placing in the fridge overnight to firm up.  Once firm, serve immediately with a dusting of powdered sugar, raspberries, coconut cream, etc.  Enjoy!

 


Delicious Vegan Cheese Soup

 

Ingredients:

6 Organic Turnips/Potatoes

1 Bag of Organic Frozen Carrots

1 Bag of Organic Cut Green Beans

2 Bags of Vegan Shredded Cheese

4 Tablespoons Nutritional Yeast

Greens from the Turnips

Red Beet Greens

4 Tablespoons Minced Garlic

Carton of Organic Vegetable Broth

Organic Onions

Organic Thyme, Basil, Parsley, Cumin, Curry, Rosemary, Italian, Oregano Seasonings 

Himalayan or Celtic Salt

 

Instructions:

Have a big pot and put the veggie broth in

Have turnips or potatoes in bite size pieces in the pot
Turn on medium high heat

Cook for a while

Put rest of veggies and ingredients in to warm

Cook the soup just long enough for the potatoes or turnips to be soft enough to eat

Ingredients and seasonings can be adjusted to taste

Also the ingredients can be more if you want to cook for more people 

 

 

 


 

Vegan Cowboy Stew

 

Ingredients:*

Large Can Vegetarian Baked Beans

Large Can Non-GMO Crushed Tomatoes 

Can Organic Green Beans

Can Red Kidney Beans

Can Black Beans

Can Organic Corn

2 Chopped Onions

**5 Chopped Organic Potatoes 

2 Cloves Garlic Chopped

Tbsp Celtic Sea or Himalayan Salt

Tbsp Chopped Hot Pepper

Cayenne Pepper

Hot Pepper Relish

 

Combine in a pot and cook 1 1/2 hours or just until potatoes are soft

Organic ingredients are healthier and tastier

*optional other ingredients chopped minced garlic, seasonings like thyme from the garden, oregano, basil, rosemary, etc

**Could use turnips from the garden, organic, instead of potatoes, the turnips can be roasted in the oven for 40 minutes on 375 in a baking pan with water, then added to the cowboy stew on the stove to have a much lower cooking time in order to preserve the nutrients of the vegetables

 


Best Vegan Lentil Soup

 

Ingredients:

1/4 Cup Extra Virgin Olive Oil

1 Medium Yellow or White Onion, Chopped

4 Organic Carrots, Peeled or Chopped

2 Celery Sticks, Chopped

4 Garlic Cloves, Pressed or Minced

2 Teaspoons Ground Cumin

1 Teaspoon Curry Powder

1 Teaspoon Organic Thyme

1 Large Can (28 ounces) Crushed Tomatoes

1 and a Half Cup Lentils, Picked over and Rinsed

6 Cups Vegetable Broth

1 Teaspoon Himalayan Sea Salt

2 Teaspoons Red Pepper Flakes

Freshly Ground Black Pepper

1 Cup Organic Swiss Chard with Stems Removed

1/2 Lemon Squeezed Juice

 

 

 

 


Delicious Healthy Cool Drink

 

Ingredients:

Distilled Water

Lemons

Mint Leaves

 

Combine in a big water dispenser with some ice cubes and enjoy :)

 



Vegan Peanut Butter Cookies

 

1 Cup vegan peanut butter

1 Cup sugar

6 Tbsp almond milk

2 Tsp. vanilla

1 Cup flour

1 Tsp baking soda

Pinch mineral salt

 

Directions: Combine in a bowl and use a sifter

Use a fork to make the design for cookies

Put parchment paper on cookie sheet so they don’t stick

Bake on 350 degrees for 10 minutes approximately

 

 

 

 



Salad Dressing Recipe

 

  • Cilantro 
  • Olive oil 
  • Salt 
  • Garlic 
  • Lemon juice

Combine in a bowl then pour on the salad that would be eaten


Delicious Red Beet Leaves/Spinach/Kale/Collard Greens Recipe 

 

Wash dark leafy greens 

Chop greens if not small enough 

Sautés onion, garlic, a little water in fry pan on medium 

After putting greens in fry pan, put garlic salt in, a little water, medium heat, a few minutes 

Put red beet juice in and heat medium a few minutes, add olive oil* after removing from heat, and serve 

 

If you don’t have red beet juice, put table spoon lemon juice and adobo 

*Sacha Inchi Oil can be used for higher omega-3

 

 


Sweet Dessert Recipe

 

  • Carob powder 
  • Organic Blue agave.  - put ingredients in blender till very smooth
  • Coconut oil

  • Bananas can be served with the above ingredients as an option

Delicious Vegan Pizza Recipe

 

Have flat round whole grain pizza crust 

Then put garden pasta sauce, vegan chao tofu cheese, vegan shredded cheese, red, yellow, and green peppers, onions, mushrooms, bake 25 minutes, 400 degrees in the oven 

Take out of the oven, then drizzle olive oil or sacha inchi oil 

 

Optional ingredients: coconut oil, parsley, tomatoes, squash, spinach, eggplant, olives, delicious

The squash and eggplant can be sauteed before adding to the pizza before the oven

With finding good veggie meat substitutes, or any sort of food, it's important to look at the ingredients and make sure there aren't unhealthy ingredients listed.  Vegan cheese can be bought or made.  It's also good to look for (Organic) and (Non-Gmo Verified).  

 

 

 


Vegan Zucchini Bread

 

1/4 Cup olive oil

1/3 Cup coconut or almond milk

1 Tbs flax seeds

1/2 Cup brown & 1/3 cup sugar

2 Tsp vanilla

1 Cup grated zucchini 

1 and a half cup spelt flour 

1/2 Tsp baking powder

1/2 Tsp baking soda

1/2 Tsp salt

1 Tsp cinnamon

1 Cup chopped walnuts or vegan carob chips

 

Pour into greased loaf pan

Bake at 350 degrees for 55 minutes

 

 


Vegan Lasagna

 

Ingredients: 

 

  • 2 jars of pasta sauce 
  • Box of healthy lasagna noodles (organic brown rice or whole grain)
  • Medium eggplant 
  • 2 yellow squash 
  • Small bag of shredded carrots 
  • 3 celery stalks 
  • Bag of vegan cheese 
  • Celtic sea salt or Himalayan salt 
  • Cayenne pepper 
  • Garlic powder 

 

Steps: 

  • Boil lasagna according to package directions 
  • While noodles are boiling, chop and sautés vegetables 
  • Drain cooked noodles 
  • Put layer of sauce in casserole pan 
  • Layer lasagna noodles, vegetables, vegan cheese and sauce, then repeat till noodles are used up 
  • Bake on 375 degrees for 45 minutes or until bubbly 

 

 


Greek Mediterranean Vegan Casserole 

 

Ingredients:

Organic tomatoes

Onions

Potatoes

Zucchini

Squash

Cucumbers

Garlic

Salt & pepper

Olive oil

 

Steps:

Drizzle a little olive oil in pan so it doesn’t stick

Slice all veggies

Layer all veggies in casserole pan

Put salt & pepper

Put chopped garlic on top of all veggies

Have oven on 375

Put casserole dish in oven for 45 minutes or till all veggies are tender

Drizzle olive oil after taking out of oven 

 

 


Tasty Vegan Butter

 

INGREDIENTS:

  • 1 1/2 c. melted refined coconut oil (not extra virgin coconut oil)
  • 1/2 c. nondairy milk (unsweetened)
  • 1/4 c. grapeseed, or light olive oil
  • 1/2 tsp. sea salt
  • 2 teaspoons liquid lecithin (if using granules, you will need 2-4xs the amount)

INSTRUCTIONS:

  1. Place all the ingredients in a blender and process at medium speed for about 1 minute.
  2. Pour into container of choice–something made of silicone is great, as it will pop out easily, but any storage container will do (line it with wax paper first for easy removal).
  3. Set it in the refrigerator for a few hours until hard or in the freezer to expedite hardening.

 


 

Butternut Squash

 

Peal 2 butternut squash, cut both ends, save seeds 

Cut squash into bite size pieces and scoop the stringy pieces out 

Put squash into baking pan with: 

  • Vegan margarine 
  • Celtic sea salt  
  • 1/4 cup brown sugar  
  • 1/2 cup water  
  • Cinnamon tablespoon  
  • 375 degrees in oven for an hour  
  • Put olive oil on after taking out of oven

 

Roast seeds in oven for 5 minutes with just sea salt  

Take out and put 100% pure maple syrup on seeds

Tasty Healthy Hot Chocolate Recipe

 

  • Almond, cashew, walnut, coconut or macadamia milk
  • Carob powder
  • 100% Pure maple syrup

Add the nut milk to a cup

Put in some carob powder and maple syrup

Heat up for a minute or so

Coconut oil is optional to be added for a taste like marshmallows

Delicious Chinese Vegan Egg Rolls

 

Get egg roll wraps in vegetable isle 

Get green and red cabbage, onion, carrots 

Take core out cabbage 

Shred cabbage and chop all vegetables  

Put in large bowl 

Put tablespoon salt, toss through 

Put tablespoon of ginger powder 

Put tablespoon of garlic salt 

Put couple tablespoons soy sauce 

Put 2 tablespoons teriyaki sauce 

Mix it all through 

Cover in fridge for an hour or 2 

Taste to check seasonings 

Roll veggies in egg roll wraps 

Put in frying pan with vegetable oil  

Cook till it’s brown on all sides 

Can serve with duck sauce to have that flavor

Energy Balls Dessert

 

1 cup oats regular 

1/2 cup ground flaxseed 

1/2 cup chunky vegan peanut butter 

1/2 cup chocolate carob chips  

1/3 cup honey* 

1 tsp. vanilla 

 

Combine in bowl & roll in balls 

Refrigerate  

*Maple syrup or agave can be used in place of honey if wished

 

 


Eggplant Casserole Recipe

 

Ingredients: 

  • 2 Eggplants 
  • Hot peppers 
  • 1 Regular pepper 
  • Onions 
  • Garlic 
  • Organic tomatoes 
  • Salt 
  • Cayenne pepper 
  • Black pepper 
  • Olive oil 
  • Organic pasta tomato sauce 

Steps: Wash everything 

Get a fry pan 

Turn burner on medium, put olive oil in pan 

Cut eggplants into slices 

Put eggplant in fry pan 

Put salt and black pepper on eggplants, then cover 

Cut all peppers, onions and put in bowl 

Flip over eggplants in fry pan, put water in pan 

Cut tomatoes  

Put eggplants in glass casserole dish 

After frying 2nd eggplant, put in separate bowl 

After eggplants are done, put onions and peppers in fry pan with 2 tablespoons of garlic 

When onions and peppers are done, put half in glass casserole dish  

Put half of the tomatoes on top of peppers and onions in glass casserole dish 

Put the 2nd layer, eggplants, then peppers, onions, then tomatoes in glass casserole dish  

Put cayenne pepper on top 

Put tomato sauce on top 

Put glass casserole dish in oven on 375 degrees with aluminum foil on top  

Leave in oven for 45 minutes, then take out and drizzle olive oil over 

Done
